Recipe: Sugar Free, Vegetarian Vitamin Packed Blueberry Muffins

I’m so excited to share how much I adore feeding my kids, Adriel and Alexander, healthy, sugar-free vegetarian foods that keep them bursting with energy. I’m all about filling their plates with vibrant fruits and veggies, skipping processed sugars to keep their bodies thriving.
I lean hard into fruits like blueberries, strawberries, apples, and bananas, they’re packed with antioxidants and fiber. For veggies, I stick to safer picks like broccoli, carrots, zucchini, and sweet potatoes, steering clear of ones like conventional spinach or bell peppers that might carry more free radicals or pesticides if not organic. It’s all about variety and balance to give my little ones the nutrients they need to grow strong and stay vibrant.
I’m pretty strict about treats, but I do let Adriel and Alexander indulge a bit when a friend (My beloved Bella) sends that yearly box of candies, it’s a fun treat, just not my go-to.
For myself, I keep sugar minimal, only sipping a glass of wine during my magical full-moon rituals each month. It’s my little moment of sparkle, but I’m now exploring sugar-free or low-sugar wines, like FitVine or Dry Farm Wines, to stay aligned with my health vibes while keeping the magic alive.
Now that autumn’s here, I’m thrilled to start baking wholesome, grab-and-go breakfasts for my kiddos. I have always been the one to prepare their breakfast, always giving them oats and fruits, or egg substitute, but autumn is here and I sure do love my baking. I remember how my late father used to love, waking up to my pumpkin muffins in the Fall.
There’s nothing like waking up to the cozy smell of freshly baked goodies! My sugar-free vegetarian blueberry muffins are a favorite, packed with fresh blueberries for natural sweetness, vegan protein powder for extra nourishment, and a boost of vitamins to keep them fueled. Here’s my recipe for you to try:
My Sugar-Free Vegetarian Blueberry Muffins
Ingredients (Makes 12 muffins):
- 1 ½ cups whole wheat flour (or gluten-free oat flour for a twist)
- ½ cup vegan protein powder (I love Orgain Organic Plant-Based Protein Powder, vanilla flavor, for that protein kick)
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp ground cinnamon (adds that cozy autumn vibe)
- 1 cup unsweetened almond milk (or oat milk, your call)
- ⅓ cup unsweetened applesauce (my go-to for natural sweetness and binding)
- ¼ cup coconut oil, melted (keeps them moist)
- 1 tsp vanilla extract
- 1 ½ cups fresh blueberries (bursting with antioxidants and flavor)
- 10 drops liquid vitamin supplement (I use MaryRuth’s Liquid Morning Multivitamin for vitamins A, C, D, and zinc to boost immunity)
- 1 tbsp chia seeds (optional, for a fiber and omega-3 boost)
Instructions:
- Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease with coconut oil.
- In a big bowl, I whisk together the flour, vegan protein powder, baking powder, baking soda, salt, and cinnamon.
- In another bowl, I mix the almond milk, applesauce, melted coconut oil, vanilla extract, and liquid vitamin drops until smooth.
- Pour the wet ingredients into the dry and stir gently—just until combined, no overmixing!
- Fold in those gorgeous fresh blueberries and chia seeds (if I’m feeling extra) to spread the love evenly.
- Spoon the batter into the muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes, or until a toothpick comes out clean. The smell will have your kitchen feeling like a hug!
- Let them cool in the tin for 5 minutes, then move to a wire rack to cool completely.
Serving Tip: These muffins are perfect for busy mornings ( especially with both kiddos back to school) packed with protein, vitamins, and that blueberry sweetness my kids adore. Pair with a piece of fruit or some nuts for a balanced breakfast that fuels their adventures, whether they’re exploring the woods or dreaming big after a museum trip.
